Gingerbread Cake

This is my first attempt at making gingerbread and I couldn’t be happier.  I’d always been biased against gingerbread thinking it would taste like the very adorable, but often dry and hard gingerbread cookies you see at Christmastime.  Last Christmas I got a silicone cake pan that makes 6 small gingerbread cakes so I decided to give it a shot.  My criteria for choosing a recipe was that I already had all of the ingredients in the house which is how I stumbled on this one from the King Arthur Flour Baker’s Companion.

Gingerbread Whoopie Pies

Every year my office has a “secret snowflake” gift exchange and holiday sweets potluck.  Since I frequently bring sweets to work throughout the year I try to make something special for the potluck.  To make it more difficult for myself, I also make enough  so that every person in the department could try one if they wanted to.  In the past the most popular dessert I’ve brought is pumpkin whoopie pies.  They were a huge hit, and I considered making them again, but I always prefer to try something new.  I thought gingerbread would be appropriately seasonal and have similar flavors, but also would allow me to try a new recipe.

Korean Beef and the Hudson River Greenway

This week I was blessed with having four days off.  Tuesday was my third and since I’d already done most of my errands I had the entire day to devote to fun.  In the morning I finished an overdue library book, watched Food Network Star, and caught up on the food blogs I follow.  In the afternoon I decided to make a jelly roll cake filled with lime curd and blackberries.  I made my grocery list and headed to the fruit stand.  When I got outside though, I realized it was far too beautiful to spend the day inside.
