Beet Pound Cake

For a long time I’ve had this idea that I could make a bright pink red velvet style cake without a bottle of food coloring if I used beets.  I’m not sure where this desire to make a cake with no artificial colors comes from – I’m not someone who is particularly concerned with my food being all-natural.  My favorite beverage is grape soda and I think Cool Ranch Doritos are the perfect food.  But for some reason the fact red velvet cake is so red because you add tons of red food coloring to the batter makes it seem less special.

Carrot Bundt Cake with Sugar Glaze

I received a food processor for the holidays from my parents, upon request and was dying to test it out.  I have memories of carrot cake as a kid, often with the frosting carrots on top. This cake is drizzled with a simple sugar frosting making more of a lighter breakfast or snack cake, as opposed to the traditional cream cheese slathered confection.

cooking note: *I found this cake extremely moist. Make sure you grease the pan very very well, it will want to stick.
