Vegan Moon Pies

The second dessert I made for the baby shower was vegan moon pies.  If you’ve never had a MoonPie they’re soft graham cracker like cookies, filled with marshmallow, and covered in chocolate.  To make these vegan I had to take some liberties with the filling and used a fluffy frosting instead of marshmallow.  It’s difficult to come by vegan marshmallows and homemade recipes called for agar powder which I didn’t have.  These were delicious- very rich and very sweet.

Vegan Carrot Cake Cupcakes

Last week I co-hosted a baby shower for one of my closest friends.  When I was deciding which treats to make my first idea was baby (miniature) cupcakes.  Since the co-host is vegan I chose to make only vegan desserts for the shower.  I’ve had some really good luck with vegan desserts in the past and it’s a fun challenge to try and make a vegan dessert that tastes as delicious as one saturated with butter.

Triple Layer Chocolate Chip Cookie Cake

Several weeks before Pat’s birthday I started asking him what sort of cake he wanted.  The first thing he said was, “Something simple.”  I was disappointed – for my favorite person’s birthday I didn’t want to make a simple cake.  Luckily a few days later Pat had a new idea: a layered chocolate chip cookie cake.

I was excited that I was going to bring this cake from Pat’s imagination to life, but I have to admit I was skeptical about how good it would taste.  It seemed a bit much.  Giant cookies, layered with frosting, and covered with even more frosting? Yikes!  That’s going to be rich.

Maple Meringues

A few weeks ago this recipe was posted on the King Arthur Flour Baker’s Blog.  I bookmarked it and baked the meringues within a week.  That never happens.  Most recipes I bookmark simply languish in my files and a very small percentage might get baked 6 months later.  So why did I make these so quickly?  First because they’re maple.  Growing up my family made maple syrup so I’m a real sucker for anything maple flavored.

Coconut Cake Truffles

When I recently made a three layer Coconut Cake I decided to reserve one layer to try cake truffles.  I’ve been meaning to make these for quite a while, really since a friend sent me this link from Bakerella years ago.  My interest was recently renewed by the delicious cake truffles sold at Momofuku Milk Bar.
