Peanut Butterscotch Drops

I first had them a few years ago when my Auntie Sharon brought them to our Christmas Eve dinner. I found them completely addictive. They’re perfect if you need a delicious dessert and only have about 25 minutes to spare, since they’re no-bake and only require three ingredients.
These are your ingredients. It really couldn’t be simpler. Melt the butterscotch chips and peanut butter together, and then mix them with corn flakes.
Then you scoop it onto a cookie sheet. You don’t have to use paper cups, but I think it makes them easier to serve.
Peanut Butterscotch Drops
Yield – 28 drops
1 – 11 ounce bag of butterscotch chips
1 cup of creamy peanut butter
5 1/2 cups of corn flakes
Measure cornflakes in a very large bowl. Melt butterscotch chips and peanut butter in a saucepan over medium heat. Pour melted mixture over cornflakes and stir to combine. Scoop onto a cookie sheet filled with muffin tin liners. Place in the refrigerator for 20 minutes to allow to harden. Store in an airtight container in the refrigerator.
Update: I made a second batch of these with a bag of semisweet chocolate chips. They were too chocolatey for my taste, but Pat ate 4 within 5 minutes. So if you love chocolate you might want to try a chocolate variety.
